Fruit Pizza

Ingredients

Tart Crust
⅓ C sugar
1 C cold butter, cut into pieces
3 egg yolks
2 ½ C flour
3-4 T ice water
Vanilla Custard (May use JELLO vanilla pudding with 2% or whole milk)
1 C Milk (use 2% or whole milk)
¼ t vanilla
¼ C sugar
1 T cornstarch
1 T flour
1 T butter

Tart Crust Preparation

  1. Cream butter and sugar
  2. Add 3 egg yolks, slightly beaten
  3. Mix the flour and ice water together.
  4. Roll out like a pie crust and put into a 2 tart pans (or round pizza pan).
  5. Poke holes with fork.
  6. Bake 350 degrees for about 10-12 minutes or until lightly brown.

Vanilla Custard Preparation

  1. Put the vanilla custard ingredients together in a pan on the stove
  2. Bring to a soft boil
  3. 3 egg yolks, slightly beaten.
  4. After custard is to a soft boil, add some to the beaten egg yolks, then pour back into the pan and heat all together

  5. Pour custard onto cooled tart shell and let cool

  6. Thinly slice all kinds of fresh fruit -- peaches, apples, pineapple, kiwi fruit, star fruit, grapes, strawberries, etc. Make lots of colors when choosing fruit. Arrange them randomly on the cooled custard. Cover with glaze.

Glaze

  1. Apricot jam or spread. Do not use preserves because they have large chunks of fruit. Make sure it's smooth. Heat jam with a little bit of water, not too much. Spreadon top of fruit. Cover all fruit well. This can be done with a pastry brush.
